Vegan Butter – ½ cup
Turbinado Cane Sugar – 1 cup
Unsweetened Plant-based Milk – ¼ cup
Vanilla Extract – 1 tbsp
All Purpose Flour – 2 cups (Oat flour or almond flour will taste great as well)
Baking Soda – 1 tsp
Sea Salt – ½ tsp
Vegan Chocolate Chips – 1 cup
How do I make this chewy chocolate chip cookies recipe?
In a small to medium size bowl cream together vegan butter and sugar with electric mix until thoroughly mixed for about 4 minutes.
Mix in plant-based milk and vanilla extract until thoroughly mixed (1-2 minutes).
Whisk flour, baking soda and salt together in a separate bigger bowl for a few seconds then add flour dry ingredients to plant-based milk wet ingredients and stir with spatula until combined. Fold in chocolate chips evenly.
Scoop out dough with a large size ice cream scoop (4 tablespoons). Line cookie dough scoops on parchment lined baking sheet.
Bake at 375 for 15-17 minutes or until you notice the edges and top are a darker golden brown. Cool for 5 minutes. Enjoy!

Recipe Tips:
1. To avoid your cookies coming out flat, be sure that your baking soda is not out of date. Baking soda has rising properties that may not react properly if you are using it out of date or don’t keep it in an air-tight container if not expired.
2. When creaming the butter and sugar make sure you are creaming them together for at least 4 minutes or until it looks like the picture above. This will also help your cookies rise correctly.
3. Parchment paper will help your cookies hold their shapes better during baking and will also make clean up a breeze.

My recipe was almost the same as yours, but my secret ingredient to making the cookies chewy is – ready? Beef gelatin powder. Yup! Also, I used almond flour instead of regular flour. And instead of regular sugar, I used Lakanto monkfruit. I think I’ll try your recipe though and serve it to my non-keto friends. Oh, and the chocolate chips I used were from Lilys.

After reading your recipe for vegan chocolate chip cookies, I now want to try them. I am not very well versed in vegan foods but this one caught my attention. I do wonder though if it would be possible to use rice flour in place of all purpose flour? Would it be possible to use honey instead of sugar? I use honey in most of my recipes since you have to use less and it helps me with certain dietary requirements.
I found the recipe to be very easy to follow. The step-by-step directions were spot on and very helpful. Do you blend the brown sugar and cane sugar together before adding it to the recipe or just put it all in at the same time? I have printed this recipe out of use later this week. Great recipe.
