Chopped Yellow Pepper – ½ of yellow pepper

How do I make this jackfruit salad?
To make this jackfruit salad you are going to need one can of young jackfruit or leftover BBQ jackfruit to add to a small to medium size salad bowl. If you are using canned young jackfruit in brine, you can refer to my recipe here on how to cook it to get rid of the brine aftertaste flavor. After you have your jackfruit flavored, all you have to do is add in the chopped ingredients above to make a quick jackfruit salad.
How do I store this jackfruit salad?
You can store this salad in an air-container in your fridge for up to three days. Storing it for a few days is great if you like to meal prep, otherwise I would eat it same day.
What does this jackfruit salad taste amazing with?
This jackfruit salad tastes great following this recipe to the T because you will have the BBQ flavor in your jackfruit, but if you are using jackfruit without flavor then adding your favorite dressing like thousand island or italian dressing tastes great with this salad as well.
Jackfruit Salad Recipe:
Makes 1 serving (double recipe if serving for more than one)
Ingredients
Lettuce – 1 cup
Chopped Yellow Pepper – ½ of yellow pepper
Chopped Red Pepper – ½ of red pepper
Shredded Carrots – ½ cup
BBQ Jackfruit – ½ cup
Small Avocado – ½ of small avocado

1. Add 1 cup of lettuce to medium size bowl (any type of lettuce you prefer).
2. Chop up ½ yellow pepper and ½ red pepper and add to bowl.
3. Add ½ cup of shredded carrots, ½ sliced small avocado, and ½ cup of bbq jackfruit to bowl.
4. Toss together, add dressing to flavor and enjoy!

I love jack fruit. It is now in my our back yard in India. We use young fruits for currying with spices that has flavor like spicey meat curries. We sauté them as breaded pieces to use as snacks. They are diabetes friendly.
